THE BEST VEGAN YOGURT WITH COCONUT MILK

VEGAN YOGURT RECIPE – INGREDIENTS:

The best thing about this vegan yogurt recipe is that you need only two ingredients.

You’ll need:

  • 2 cans of full-fat canned coconut milk
  • vegan probiotic capsules (they should have a total of 50 billion active cells)

Please note that you also need an Instant Pot with a yogurt function to make this recipe. You can either check your local drug store or pharmacy for vegan probiotic capsules or order them online.

HOW TO MAKE HOMEMADE VEGAN YOGURT IN YOUR INSTANT POT:

Making vegan yogurt in your instant pot couldn’t be easier. You actually don’t have to do much. However, it takes about 2 days for the yogurt to be ready to eat.

1. Pour two cans of full fat canned coconut milk into your Instant Pot. Make sure to use an Instant Pot with a yogurt function. I used the Instant Pot Duo 6 Quart for my coconut yogurt.

2. Carefully open a vegan probiotic capsule and pour its content into the Instant Pot. You should have a total of 50 billion active cells. If you have probiotic capsules with less active cells, just use several capsules to reach 50 billion.

3. Stir with a whisk or spoon until well combined.

4. Press the “Yogurt” button on your Instant Pot and set it to 19 hours using the “+” and “-” buttons. Then let the Instant Pot do its thing.

5. After 18 hours open the Instant Pot. Please note that the yogurt will still be pretty thin and runny. Don’t worry, that’s normal. It will get considerably thicker when it’s cooled down for at least another 24 hours in the fridge.

6. After opening the lid, transfer the coconut yogurt into small glass jars or plastic containers.

7. Store them in the fridge for at least 24 hours. The longer you store the yogurt the thicker it will get.

8. Serve the coconut yogurt with fresh berries or granola.

VEGAN YOGURT INSTANT POT  – RECIPE NOTES:

  • Please make sure you follow the recipe. I hate for you to wait for all this time and then not have a satisfying result. It’s important to use full fat coconut milk for this recipe. When using a light version the yogurt might not get thick enough.
  • You need an Instant Pot with a yogurt function for this recipe. I used the Instant Pot Duo 6 Quart. It will not work without the yogurt program.
  • If you’re looking for a vegan yogurt, make sure the probiotic capsules you use are vegan. I talked about this issue a bit more under the section “FAQ – Vegan Yogurt with Probiotics”. I also included a list of brands that offer vegan probiotics.
  • You need a total of 50 billion active cells for this homemade vegan yogurt. You can also use the content of several capsules. Just make sure you have a total of 50 billion. Carefully open the probiotic capsules and only add the content of the capsule to the coconut milk, not the whole capsule.
  • While you don’t have to do much, the yogurt takes quite a while to make. In total you need around 2 days. First 18 hours in the Instant Pot and then at least another 24 hours in the fridge.
  • Agar agar powder serves as a thickener for this vegan yogurt. I usually use 1/2 teaspoon of powdered agar agar. If you want your yogurt thicker, you could use 1 teaspoon.

COMMON PROBLEMS:

MY YOGURT HAS THE SMELL AND AFTERTASTE OF PAST MEALS.

Make sure to clean the inner pot of your instant pot with hot water before making your yogurt. I typically only cook savory meals in there and leftover aromas easily carry over.

When I made my first Instant Pot yogurt it smelled and tasted like curry so badly I had to throw it away. So frustrating!

I now got a separate sealing ring that I use for sweet recipes and yogurt. If you make a lot of savory recipes in your Instant Pot, I suggest you do the same.

VEGAN YOGURT – FAQS:

1. HOW TO MAKE VEGAN YOGURT WITHOUT STARTER

I didn’t use any kind of store-bought yogurt starter for my yogurt. When I first thought about making vegan yogurt, I actually started to look for one.

However, I couldn’t find a vegan version in any of the grocery stores around my home in Montreal. They all contained skim milk powder.

I know that vegan yogurt starters exist, but as far as I know you have to order them online, which I didn’t want to do. Maybe if you’re lucky, you could also find a vegan yogurt starter in a natural or health store. But they can be quite pricey.

So I started to look for another solution and I eventually used probiotic capsules for my vegan coconut yogurt, which worked just as well.

2. VEGAN YOGURT WITH PROBIOTICS

Using probiotics for your vegan yogurt can be much cheaper than using a vegan yogurt starter. And it works just as well!

However, not all probiotic capsules you find in the drug store are vegan. The cultures used for these priobiotics are usually grown on dairy products.

When searching for a vegan probiotic, make sure to pick a brand that is labeled “vegan” and not just “non-dairy”. “Non-dairy” does only mean that this products does not contain any dairy.

However, it doesn’t tell you much about the process of making these probiotic capsules. It could still involve dairy.

Here’s a helpful list of vegan probiotic capsules.

3. WHAT IS VEGAN YOGURT MADE OF?

Vegan yogurt can be made of several ingredients.

Here are the most popular kinds of vegan yogurt:

  • soy yogurt
  • almond yogurt
  • coconut yogurt
  • cashew yogurt

You can either enjoy plain yogurt, which you can serve with fresh berries and maybe granola. Or if you’re looking for a sweeter version, keep an eye out for vegan yogurt with fruits in them.

Some brands even offer vegan Greek yogurt, which is much thicker than regular yogurt.

4. DOES VEGAN YOGURT HAVE PROBIOTICS? AND DOES VEGAN YOGURT HAVE LIVE CULTURES?

Yes, a lot of of vegan yogurts contain probiotics as well as live cultures. It doesn’t matter if the yogurt is made with cow’s milk or for example with soy milk.

You still get all the benefits of probiotics. For example it’s great for your digestive health!

5. WHAT ARE THE MOST POPULAR VEGAN YOGURT BRANDS?

These days it’s very easy to find vegan yogurt in the supermarket. In health food stores you might find an even bigger selection of plant-based yogurts.
